Oregon Star Thistle Honey Star Thistle Honey has a viscous appearance but is surprisingly dense. Light gold in color, it has a very mild and pleasing floral taste. What makes this honey so incredible is the sweet and persistent aftertaste. It has a distinct aroma of anise (some say almonds), slightly sharp or pungent with notes of sweet, spicy cinnamon, molasses and prune. Like sage honey, star thistle honey captures the fragrance of the high desert in its flavor. It is often quick to crystallize, great for making creamed honey. Star Thistle honey is great with breakfast foods, making granola, and with hot tea. Note: Our Star Thistle Honey is pure, raw, and unadulterated, and may crystalize as a result.
